Or the art of complicating something simple! This expression comes from the idea that it is possible to transform something as simple as milk into a result as complex and elaborate as cheese.
In our Ardèche mountains, we transform the milk from our grass-fed sheep into delicious cheeses every morning… But the work isn't finished; after the transformation comes the aging process. Indeed, some cheeses will need a few days, while others will need several months to develop their fruity flavor and creamy texture.
