Castagnou is an aperitif made from chestnut liqueur and white wine, traditionally enjoyed in Ardèche.
What is it made of? Traditionally, Castagnou is prepared with one part chestnut liqueur (1/3) mixed with several parts dry white wine (2/3). The proportions can be varied according to taste, to obtain a more or less sweet aperitif. It can then be enjoyed chilled in a flute glass.
What is the origin of the name? Nothing is certain, but its name probably refers to the chestnut, called castanha in Occitan.
What does this cocktail taste like? The chestnut liqueur is very rich and sweet. It softens the fresh and tangy notes of the white wine.

We met Sarah Gauthier, who took over the family distillery in Saint-Désirat and the Alambic Museum with her brother Romain.

What are the main stages in the production of your chestnut liqueur?
The production process begins with the selection of chestnuts, which are then macerated to extract all their aromas. After this essential step, the mixture is blended with alcohol, sugar, and water according to our recipe. The liqueur is then filtered, left to rest so that the flavors harmonize perfectly, and finally bottled.
How do you select the chestnuts used to make your liqueur?
We prioritize high-quality chestnuts, selected for their aromatic richness and consistency. Our goal is to obtain a liqueur that faithfully reproduces the natural taste of the fruit, with notes that are at once indulgent, sweet, and lightly toasted.
How long does it take from the start of production to bottling?
Depending on the timing and resting periods required, several weeks are needed between the start of production and bottling. We always prioritize the time needed for aroma development over speed of production.
Which step in the production of your liqueur requires the most skill or patience?
Maceration is undoubtedly the most crucial step. Finding the right balance is essential to extract the chestnut aromas without masking its delicate character. Resting periods are also vital: they allow the liqueur to develop roundness and harmony.
Is chestnut liqueur available all year round?
Yes, our chestnut liqueur is available throughout the year, although it naturally enjoys particular popularity in the autumn and during the holiday season.
At what temperature would you recommend enjoying a kir ardéchois (castagnou)?
We recommend serving Castagnou chilled, ideally between 6 and 8°C. This temperature preserves the freshness of the white wine while allowing the rich aromas of the chestnut to fully develop. It's an original aperitif that immediately evokes the flavors of the Ardèche region.
