TROUT GRAVLAX
The trout come from the fish farm located in Labatie-d'Andaure. The fillets are left in a coarse salt/brown sugar/condiments mixture for 22 hours (culinary technique imported from Scandinavian countries). They are then rinsed and finally served with a few sprigs of dill or sorrel, radish shoots from the garden and small country potatoes.
Meat ravioli: in reality they are Pelmeni from Ukraine. Entirely homemade beef and pork ravioli. Served with a tomato coulis. We use the term ravioli for convenience.
Cheese ravioli: in Ukraine they are called Varienkis. Cheese ravioli (Comté and Fourme from the region). Served with a tomato coulis.
The Galette du jardin for vegetable lovers. The stars of our vegetable garden or market gardener cooked “al dente” in pancakes. Small vegetables from our garden cut into cubes, steamed, crunchy, accompanied by a few slices of sausage, covered with a thin layer of Comté cheese and drowned in a beaten egg.
Located 1km from Lalouvesc and the St Régis basilica, the Le Mont Besset residence and its restaurant are an invitation to escape, a change of scenery but also a clean air cure, guaranteed renewal. We have completely restored this house on 4 floors in a "charming family home" spirit combined with a decoration contemporary, sober and relaxing.
