Caterer Restaurant
Putting the Ardèche on a plate is quite an art. The chef's secret, meeting expectations and composing a tailor-made brunch the next day.
What do you like / what do you prefer in your job?
There are no tasks that I prefer, I like them all equally. What I also appreciate is the contact with the customers, the relationship. Customers who come are most often there to share a tasty moment, and are relaxed. This is particularly the case for food and wine pairing evenings.
Take-out sales have grown since COVID, making it possible to eat at home what we could serve in restaurants. The menu is renewed every 6 weeks with always an emphasis on seasonal and local products.
How do you put the Ardèche on the plates of the newlyweds?
I put Ardèche in tiramisus and entremets, it's with chestnut cream that I put Ardèche. For wedding and group meals, fricassees, fillets or even haunches of veal from Maison Rousson (local butcher) are very popular.
I also like to take up challenges I have had requests such as the preparation of non-alcoholic or vegetarian wedding meals. I talk to the bride and groom beforehand to clearly identify their requests and be sure to be able to meet their expectations.
The brunch the day after the wedding usually takes place at 11 a.m. I offer an assortment of charcuterie, salads, cold meats, cheeses, fruit salads, pognes… It always takes place in a relaxed atmosphere.
